Ingredients
- 2 cups cooked jerk chicken, shredded
- 1 cup shredded mozzarella cheese

- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
- 2 tablespoons jerk seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the shredded jerk chicken with the jerk seasoning until well coated.
- Place a tortilla on a flat surface and sprinkle half of the mozzarella cheese evenly over one half of the tortilla.
- Evenly distribute the seasoned jerk chicken, red bell pepper, red onion, and cilantro over the cheese.
- Sprinkle the remaining mozzarella cheese over the chicken and fold the tortilla in half to cover the filling.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.

- Repeat with the remaining tortillas and filling, adding more olive oil to the skillet as needed.
