Ingredients

  • 8 large shrimp, peeled and deveined

  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and chop into bite-sized pieces.

  9. Repeat with the remaining tortillas and filling ingredients.
  10. Slice the quesadillas into wedges and serve hot.
