Ingredients
- 8 large shrimp, peeled and deveined
- 4 ounces spicy chorizo, sliced
- 4 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.
- Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and chop into bite-sized pieces.
- In the same skillet, add the remaining olive oil and the sliced chorizo. Cook for 3-4 minutes until the chorizo is crispy and the fat has rendered.
- Remove the chorizo from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla.
- Top the cheese with half of the chopped shrimp, chorizo, diced red bell pepper, and cilantro.
- Fold the tortilla in half over the filling and press down gently with a spatula.
- Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling ingredients.
- Slice the quesadillas into wedges and serve hot.
