Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/2 cup Cuban mojo sauce
- 8 flour or corn tortillas
- 2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the shredded chicken with the Cuban mojo sauce until well coated.
- Place a tortilla on a flat surface and sprinkle a layer of mozzarella cheese on one half of the tortilla.
- Spread a portion of the mojo chicken over the cheese and sprinkle with chopped cilantro.
- Fold the tortilla in half to cover the filling.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Carefully place the filled tortilla in the skillet and cook for 2-3 minutes on each side, or until golden and crispy.
- Repeat with the remaining tortillas and filling, adding more oil to the skillet as needed.
- Slice the quesadillas into wedges and serve hot.
