Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1/2 cup Cuban mojo sauce
  • 8 flour or corn tortillas
  • 2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the shredded chicken with the Cuban mojo sauce until well coated.
  2. Place a tortilla on a flat surface and sprinkle a layer of mozzarella cheese on one half of the tortilla.
  3. Spread a portion of the mojo chicken over the cheese and sprinkle with chopped cilantro.
  4. Fold the tortilla in half to cover the filling.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat.
