Quetta Mutton Karahi (کوئٹہ مٹن کڑاہی)

Ingredients

  • 1 kg mutton, cut into pieces
  • 2 onions, finely sliced
  • 3 tomatoes, chopped
  • 1/2 cup yogurt
  • 1/4 cup ghee or oil
  • 2-3 green chilies, slit
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee or oil in a karahi or deep pan.
  2. Add sliced onions and sauté until golden brown.
  3. Now add ginger garlic paste and mutton pieces. Cook until mutton changes color.
  4. Then add chopped tomatoes, yogurt, and all the spices. Mix well.
  5. Cover and cook on low heat until the mutton is tender and the oil separates.
  6. Garnish with fresh coriander leaves and green chilies.
  7. Serve hot with naan or roti.
