Quetta Mutton Pulao (کوئٹہ مٹن پلاؤ)
Quetta Mutton Pulao is a delicious and aromatic rice dish that originates from the Muhajir cuisine. It is a flavorful combination of tender mutton, fragrant basmati rice, and a blend of traditional spices.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1/2 cup yogurt
- 1 tomato, chopped
- 2 green chilies, slit
- Whole spices: 2 bay leaves, 4 green cardamoms, 4 cloves, 1-inch cinnamon stick
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 4 cups water
- 3 tablespoons ghee or oil
Instructions
- Heat ghee or oil in a large pot and add the whole spices and cumin seeds. Sauté until fragrant.
- Add the sliced onion and cook until golden brown.
- Now, add the minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
- Add the mutton pieces and cook until they are browned on all sides.
- Stir in the chopped tomato, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft.
- Whisk the yogurt and garam masala together, then add it to the pot. Cook for a few minutes.
- Pour in the water and bring it to a boil. Then, reduce the heat and let it simmer until the mutton is tender.
- Once the mutton is cooked, add the soaked basmati rice and gently mix everything together.
- Cover the pot with a tight-fitting lid and let the pulao cook on low heat until the rice is tender and the water is absorbed.
- Fluff the pulao with a fork and serve hot.
