Quetta Sajji (کوئٹہ سجی)

Ingredients

  • 1 whole chicken, cleaned and marinated
  • 1 tablespoon red chili powder
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • Salt to taste
  • 1/2 cup lemon juice
  • 4 large skewers

Instructions

  1. Preheat the oven to 180°C.
  2. Mix red chili powder, cumin powder, coriander powder, turmeric powder, ginger paste, garlic paste, salt, and lemon juice to make a marinade.
  3. Apply the marinade all over the chicken, including inside the cavity.
  4. Thread the chicken onto the skewers, securing the wings and legs tightly.
  5. Place the skewered chicken in the preheated oven and roast for 2 hours, or until the chicken is cooked through and golden brown.
  6. Remove from the oven and let it rest for 10 minutes before serving.
