Quiche Au Fromage Et Poireaux Belge (belgian Cheese And Leek Quiche)

Ingredients

  • 1 pre-made pie crust
  • 2 leeks, white and light green parts only, sliced
  • 1 tablespoon butter
  • 1 cup shredded Gouda cheese
  • 1 cup shredded Emmental cheese
  • 4 eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch tart pan and press it firmly into the bottom and sides. Trim any excess crust hanging over the edge.
  3. In a skillet, melt the butter over medium heat. Add the sliced leeks and sauté until softened, about 5 minutes. Remove from heat and let cool slightly.
  4. Sprinkle the shredded Gouda and Emmental cheese over the bottom of the pie crust.
  5. In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Pour this mixture over the cheese in the pie crust.
  6. Arrange the sautéed leeks on top of the custard filling.
  7. Bake the quiche in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
  8. Let the quiche cool for a few minutes before slicing and serving.
