Quiche Au Fromage Et Poireaux Belge (belgian Cheese And Leek Quiche)
Quiche au Fromage et Poireaux Belge, or Belgian Cheese and Leek Quiche, is a classic dish from Belgian cuisine that combines the rich flavors of cheese and the delicate sweetness of leeks in a savory custard filling, all baked in a buttery crust.
Ingredients
- 1 pre-made pie crust
- 2 leeks, white and light green parts only, sliced
- 1 tablespoon butter
- 1 cup shredded Gouda cheese
- 1 cup shredded Emmental cheese
- 4 eggs
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a 9-inch tart pan and press it firmly into the bottom and sides. Trim any excess crust hanging over the edge.
- In a skillet, melt the butter over medium heat. Add the sliced leeks and sauté until softened, about 5 minutes. Remove from heat and let cool slightly.
- Sprinkle the shredded Gouda and Emmental cheese over the bottom of the pie crust.
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Pour this mixture over the cheese in the pie crust.
- Arrange the sautéed leeks on top of the custard filling.
- Bake the quiche in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
- Let the quiche cool for a few minutes before slicing and serving.
