Ingredients

  • 250g egg noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 200g firm tofu, cubed
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced onion and minced garlic, and sauté until fragrant.
  4. Add the bell pepper, broccoli, and carrot, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Push the vegetables to the side of the pan and add the cubed tofu. Cook until lightly browned.
  6. Combine the cooked noodles with the vegetables and tofu in the pan.
  7. In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour the sauce over the noodle mixture and toss to combine.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
