Quick Dinner Rolls

Ingredients

  • 2 1/4 tsp active dry yeast
  • 1 cup warm water
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 tsp salt
  • 1 egg
  • 3 1/2 cups all-purpose flour

Instructions

  1. In a large bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
  2. Add sugar, oil, salt, egg, and 2 cups of flour to the yeast mixture. Mix well.
  3. Add the remaining flour, 1/2 cup at a time, stirring well after each addition.
  4. Knead the dough on a floured surface for 5-7 minutes until it is smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place in a greased 9x13 inch baking pan.
  7. Cover and let the rolls rise for 30 minutes.
  8. Preheat the oven to 375°F (190°C).
  9. Bake the rolls for 12-15 minutes or until golden brown.
  10. Brush the tops of the rolls with melted butter, if desired.
