Ingredients
- 1 cup quinoa, rinsed
- 1 can black beans, drained and rinsed

- 8 small corn tortillas

Instructions

- Add the black beans to the skillet and stir to combine with the onion and spices. Cook for 5 minutes, then season with salt and pepper to taste.
