Quinoa And Vegetable Stir-fry

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  3. In a large skillet or wok, heat the olive oil over medium-high heat. Add the onion and garlic, and sauté until the onion is translucent.
  4. Add the bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
  5. Add the cooked quinoa to the skillet and stir to combine with the vegetables.
  6. In a small bowl, mix together the soy sauce and sesame oil. Pour the sauce over the quinoa and vegetables, and toss to coat evenly. Season with salt and pepper to taste.
  7. Remove from heat and serve the quinoa and vegetable stir-fry hot.
