Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
- Add the cooked quinoa to the skillet and stir to combine with the vegetables.
- In a small bowl, mix together the soy sauce and sesame oil. Pour the sauce over the quinoa and vegetables, and toss to coat evenly. Season with salt and pepper to taste.
- Remove from heat and serve the quinoa and vegetable stir-fry hot.
