Quinoa-stuffed Bell Peppers With Cheese

Ingredients

  • 4 large bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. Rinse the quinoa under cold water and drain.
  3. In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic until softened.
  4. Add the quinoa, cumin, and cherry tomatoes to the saucepan and stir to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  6. Preheat the oven to 375°F (190°C).
  7. Fluff the quinoa with a fork and stir in half of the shredded cheese. Season with salt and pepper.
  8. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  9. Sprinkle the remaining cheese on top of the stuffed peppers.
  10. Bake for 20-25 minutes or until the peppers are tender and the cheese is melted and golden brown.
