Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheese

- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Rinse the quinoa under cold water and drain.
- In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic until softened.
- Add the quinoa, cumin, and cherry tomatoes to the saucepan and stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Preheat the oven to 375°F (190°C).
- Fluff the quinoa with a fork and stir in half of the shredded cheese. Season with salt and pepper.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- Sprinkle the remaining cheese on top of the stuffed peppers.
- Bake for 20-25 minutes or until the peppers are tender and the cheese is melted and golden brown.
