Quinoa-stuffed Butternut Squash

Ingredients

  • 1 butternut squash, halved and seeds removed
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the butternut squash halves on a baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast for 40-45 minutes, or until the squash is tender.
  3. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the quinoa, cumin, and paprika to the saucepan, and stir to combine. Cook for 1-2 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  6. Fluff the quinoa with a fork and stir in the chopped parsley. Season with salt and pepper to taste.
  7. Spoon the quinoa mixture into the roasted butternut squash halves.
  8. Return the stuffed squash to the oven and bake for an additional 10 minutes.
  9. Remove from the oven and let cool for a few minutes before serving.
