Ingredients

  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1 cup all-purpose flour
  • 1/2 cup water (for the dough)
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt (for the dough)

Instructions

  1. In a bowl, mix the ground lamb, onion, parsley, cumin, salt, and black pepper. Add 1/4 cup of water and mix well to combine.
  2. In a separate bowl, combine the flour, water, vegetable oil, and salt to make a smooth dough. Divide the dough into small balls and roll each ball into a thin circle.
  3. Place a portion of the lamb filling onto one half of each dough circle, then fold the other half over the filling to create a half-moon shape. Press the edges firmly to seal the pies.
  4. Heat a non-stick pan over medium heat and cook the pies for 3-4 minutes on each side until they are golden brown and crispy.
  5. Serve the qutab hot with yogurt or a tangy tomato sauce.
