Qutab (azerbaijani Style Lamb Pies)
Qutab is a popular Azerbaijani dish consisting of savory lamb-filled pies. These delicious pies are perfect for a cozy dinner or a special gathering with friends and family.
Ingredients
- 1 lb ground lamb
- 1 onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 cup all-purpose flour
- 1/2 cup water (for the dough)
- 2 tablespoons vegetable oil
- 1/4 teaspoon salt (for the dough)
Instructions
- In a bowl, mix the ground lamb, onion, parsley, cumin, salt, and black pepper. Add 1/4 cup of water and mix well to combine.
- In a separate bowl, combine the flour, water, vegetable oil, and salt to make a smooth dough. Divide the dough into small balls and roll each ball into a thin circle.
- Place a portion of the lamb filling onto one half of each dough circle, then fold the other half over the filling to create a half-moon shape. Press the edges firmly to seal the pies.
- Heat a non-stick pan over medium heat and cook the pies for 3-4 minutes on each side until they are golden brown and crispy.
- Serve the qutab hot with yogurt or a tangy tomato sauce.
