Qutab (azerbaijani Style Meat Pies)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 lb ground lamb or beef
  • 1 onion, finely chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh herbs (parsley, cilantro, dill)
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  2. In a separate bowl, mix the ground meat, chopped onion, cumin, paprika, salt, pepper, and fresh herbs.
  3. Divide the dough into 6 equal portions and roll each portion into a thin circle.
  4. Place a portion of the meat filling on one half of each dough circle, leaving a border around the edge.
  5. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
  6. Heat the vegetable oil in a large skillet over medium heat. Cook the qutabs for 3-4 minutes on each side, until golden brown and crispy.
  7. Remove from the skillet and drain on paper towels. Serve hot.
