Qutab (azerbaijani Style Meat Pies)
Qutab is a popular Azerbaijani dish made of thinly rolled dough filled with various fillings, such as meat, herbs, and spices. These savory meat pies are a delicious and satisfying meal that can be enjoyed as an appetizer or a main course.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup water
- 1 lb ground lamb or beef
- 1 onion, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh herbs (parsley, cilantro, dill)
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a separate bowl, mix the ground meat, chopped onion, cumin, paprika, salt, pepper, and fresh herbs.
- Divide the dough into 6 equal portions and roll each portion into a thin circle.
- Place a portion of the meat filling on one half of each dough circle, leaving a border around the edge.
- Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
- Heat the vegetable oil in a large skillet over medium heat. Cook the qutabs for 3-4 minutes on each side, until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Serve hot.
