Rabbit Gratin (lyonnaise-style Gratin De Lapin)
Rabbit Gratin, or Gratin de Lapin, is a classic dish from Lyonnaise cuisine that combines tender rabbit meat with a creamy, cheesy gratin topping. This dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 whole rabbit, cut into pieces
- 2 onions, thinly sliced
- 4 cloves of garlic, minced
- 1 cup white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 1/2 cup breadcrumbs
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the rabbit pieces and brown them on all sides. Remove the rabbit from the skillet and set aside.
- In the same skillet, sauté the onions and garlic until softened.
- Deglaze the skillet with white wine, scraping up any browned bits from the bottom.
- Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
- Return the rabbit pieces to the skillet. Season with salt and pepper. Cover and let it simmer for 30 minutes.
- Transfer the rabbit and sauce to a baking dish. Sprinkle the grated Gruyère cheese evenly over the top.
- Sprinkle the breadcrumbs over the cheese layer.
- Bake in the preheated oven for 20-25 minutes, or until the gratin topping is golden and bubbly.
- Serve the Rabbit Gratin hot, accompanied by crusty bread or a simple green salad.
