Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 onions, thinly sliced
  • 4 cloves of garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the rabbit pieces and brown them on all sides. Remove the rabbit from the skillet and set aside.
  3. In the same skillet, sauté the onions and garlic until softened.
  4. Deglaze the skillet with white wine, scraping up any browned bits from the bottom.
  5. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
  6. Return the rabbit pieces to the skillet. Season with salt and pepper. Cover and let it simmer for 30 minutes.
  7. Transfer the rabbit and sauce to a baking dish. Sprinkle the grated Gruyère cheese evenly over the top.
  8. Sprinkle the breadcrumbs over the cheese layer.
  9. Bake in the preheated oven for 20-25 minutes, or until the gratin topping is golden and bubbly.
  10. Serve the Rabbit Gratin hot, accompanied by crusty bread or a simple green salad.
