Ingredients
- 1 whole rabbit, cut into pieces
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon paprika
- 1/2 cup white wine
- 2 cups tomato sauce
- Salt and pepper to taste
Instructions
- Season the rabbit pieces with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and brown on all sides. Remove the rabbit from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and bay leaves. Sauté until the onion is soft and translucent.
- Sprinkle the paprika over the onion mixture and stir to combine.
- Pour in the white wine and let it simmer for a few minutes to reduce.
- Return the rabbit pieces to the pot and add the tomato sauce. Stir to coat the rabbit with the sauce.
- Cover the pot and let the rabbit simmer in the tomato sauce for about 1 hour, or until the meat is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Remove the bay leaves before serving.
