Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon paprika
  • 1/2 cup white wine
  • 2 cups tomato sauce
  • Salt and pepper to taste

Instructions

  1. Season the rabbit pieces with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and brown on all sides. Remove the rabbit from the pot and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and bay leaves. Sauté until the onion is soft and translucent.
  4. Sprinkle the paprika over the onion mixture and stir to combine.
  5. Pour in the white wine and let it simmer for a few minutes to reduce.
  6. Return the rabbit pieces to the pot and add the tomato sauce. Stir to coat the rabbit with the sauce.
  7. Cover the pot and let the rabbit simmer in the tomato sauce for about 1 hour, or until the meat is tender.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Remove the bay leaves before serving.
