Radish Kimchi

Ingredients

  • 2 lbs Korean radish, cut into 1-inch cubes
  • 1/4 cup Korean red pepper flakes
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp grated ginger
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1/2 cup water

Instructions

  1. In a large bowl, combine the radish, red pepper flakes, garlic, onion, green onions, ginger, fish sauce, sugar, and salt.
  2. Add water and mix well to ensure the radish is coated with the seasoning.
  3. Transfer the mixture to a clean glass jar, pressing down to pack the radish tightly.
  4. Cover the jar and let it sit at room temperature for 1-2 days to ferment.
  5. Once fermented, store the radish kimchi in the refrigerator.
