Radish Kimchi
Radish kimchi is a traditional Korean side dish made with crunchy, spicy radishes. This fermented dish is packed with flavor and is a great addition to any meal.
Ingredients
- 2 lbs Korean radish, cut into 1-inch cubes
- 1/4 cup Korean red pepper flakes
- 3 cloves garlic, minced
- 1 small onion, thinly sliced
- 2 green onions, chopped
- 1 tbsp grated ginger
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 tbsp salt
- 1/2 cup water
Instructions
- In a large bowl, combine the radish, red pepper flakes, garlic, onion, green onions, ginger, fish sauce, sugar, and salt.
- Add water and mix well to ensure the radish is coated with the seasoning.
- Transfer the mixture to a clean glass jar, pressing down to pack the radish tightly.
- Cover the jar and let it sit at room temperature for 1-2 days to ferment.
- Once fermented, store the radish kimchi in the refrigerator.
