Rafute Ramen (ラフテーラーメン)

Ingredients

  • 1 lb pork belly
  • 4 packs of ramen noodles
  • 6 cups chicken broth
  • 1 cup soy sauce
  • 1 cup mirin
  • 1/2 cup sugar
  • 4 hard-boiled eggs, halved
  • 4 green onions, chopped

Instructions

  1. In a large pot, combine the chicken broth, soy sauce, mirin, and sugar. Bring to a boil.
  2. Add the pork belly to the pot and reduce the heat to a simmer. Cover and cook for 1.5 hours, until the pork is tender.
  3. Cook the ramen noodles according to the package instructions. Drain and set aside.
  4. Once the pork is tender, remove it from the pot and slice it into thin pieces.
  5. Divide the cooked noodles among 4 bowls and ladle the broth over the noodles.
  6. Top each bowl with slices of pork belly, a halved hard-boiled egg, and chopped green onions.
