Ingredients
- 1 lb pork belly
- 4 packs of ramen noodles
- 6 cups chicken broth
- 1 cup soy sauce
- 1 cup mirin
- 1/2 cup sugar
- 4 hard-boiled eggs, halved
- 4 green onions, chopped
Instructions
- In a large pot, combine the chicken broth, soy sauce, mirin, and sugar. Bring to a boil.
- Add the pork belly to the pot and reduce the heat to a simmer. Cover and cook for 1.5 hours, until the pork is tender.
- Cook the ramen noodles according to the package instructions. Drain and set aside.
- Once the pork is tender, remove it from the pot and slice it into thin pieces.
- Divide the cooked noodles among 4 bowls and ladle the broth over the noodles.
- Top each bowl with slices of pork belly, a halved hard-boiled egg, and chopped green onions.
