Rajasthani Bhindi Masala (Okra Stir-Fry)

Ingredients

  • 500g okra, washed and dried
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Trim the ends of the okra and slice them lengthwise.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and sauté for a minute.
  4. Now, add the chopped tomatoes and cook until they turn soft.
  5. Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  6. Add the sliced okra and stir to combine. Cover and cook for 10-12 minutes, stirring occasionally, until the okra is tender.
  7. Garnish with fresh cilantro and serve hot with roti or rice.
