Rajasthani Bhindi Masala (Okra Stir-Fry)
Okra Stir-Fry, also known as Rajasthani Bhindi Masala, is a flavorful and aromatic dish from the Rajasthani cuisine. This vegetarian dish is made with tender okra, spices, and herbs, creating a delicious and healthy meal.
Ingredients
- 500g okra, washed and dried
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Trim the ends of the okra and slice them lengthwise.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Now, add the chopped tomatoes and cook until they turn soft.
- Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Add the sliced okra and stir to combine. Cover and cook for 10-12 minutes, stirring occasionally, until the okra is tender.
- Garnish with fresh cilantro and serve hot with roti or rice.
