Jaisalmer-Style Chickpeas, also known as Rajasthani Chane Jaisalmer Ke, is a traditional dish from the royal state of Rajasthan in India. This flavorful and aromatic dish is a staple in Rajasthani cuisine and is often enjoyed with rice or Indian bread.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and slit green chilies, and cook for 2 minutes.
- Add the pureed tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Drain the soaked chickpeas and add them to the pot. Mix well to coat the chickpeas with the masala.
- Pour in enough water to cover the chickpeas and bring to a boil. Reduce heat, cover, and simmer for 30-35 minutes or until the chickpeas are tender.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
