Rajasthani Chane Jaisalmer Ke (Jaisalmer-Style Chickpeas)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and slit green chilies, and cook for 2 minutes.
  4. Add the pureed tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the oil separates from the masala.
  5. Drain the soaked chickpeas and add them to the pot. Mix well to coat the chickpeas with the masala.
  6. Pour in enough water to cover the chickpeas and bring to a boil. Reduce heat, cover, and simmer for 30-35 minutes or until the chickpeas are tender.
  7. Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
