Rajasthani Ghevar (Saffron-Flavored Sweet Pancake)

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1/4 teaspoon cardamom powder
  • 1/4 cup milk
  • 1/4 cup water
  • Ice cubes

Instructions

  1. In a bowl, mix the all-purpose flour and ghee to form a crumbly mixture.
  2. Add water and milk to the mixture to form a smooth batter.
  3. Dissolve saffron threads in 2 tablespoons of warm milk and add it to the batter along with cardamom powder.
  4. Heat ghee in a deep frying pan and pour a ladleful of batter into the hot ghee to form a pancake shape.
  5. Cook on low heat until the edges turn golden brown and crispy.
  6. Remove the pancake from the ghee and place it on a plate lined with paper towels to absorb excess ghee.
  7. Repeat the process with the remaining batter to make more pancakes.
  8. Once the pancakes are cooled, stack them on top of each other to form a tower.
  9. Garnish with slivered almonds and pistachios.
