Rajasthani Mutton Curry

Ingredients

  • 500g mutton, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 2-3 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp cumin seeds
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1-inch cinnamon stick
  • Salt to taste
  • 2-3 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a heavy-bottomed pan and add cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté for a minute.
  2. Add chopped onions and cook until they turn golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for 2-3 minutes.
  4. Add mutton pieces and cook until they are browned.
  5. Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for 5-7 minutes.
  6. Whisk the yogurt and add it to the mutton. Stir well and cook for another 5 minutes.
  7. Pour in 2 cups of water, cover the pan, and let the mutton simmer for 45-50 minutes or until tender.
  8. Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread.
