Rajasthani Mutton Curry
Rajasthani Mutton Curry is a rich and flavorful dish from the royal state of Rajasthan in India. This dish is known for its aromatic spices and tender mutton pieces cooked to perfection.
Ingredients
- 500g mutton, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup yogurt
- 2 tbsp ginger-garlic paste
- 2-3 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp cumin seeds
- 2-3 cloves
- 2-3 green cardamom pods
- 1-inch cinnamon stick
- Salt to taste
- 2-3 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a heavy-bottomed pan and add cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté for a minute.
- Add chopped onions and cook until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for 2-3 minutes.
- Add mutton pieces and cook until they are browned.
- Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for 5-7 minutes.
- Whisk the yogurt and add it to the mutton. Stir well and cook for another 5 minutes.
- Pour in 2 cups of water, cover the pan, and let the mutton simmer for 45-50 minutes or until tender.
- Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread.
