Rajma

Rajma is a popular North Indian dish made with red kidney beans in a spiced tomato-based sauce. It is typically served with rice or roti.

Ingredients

  • 2 cups dried red kidney beans, soaked overnight
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Pressure cook the soaked kidney beans with salt until they are soft.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the minced garlic and grated ginger, and sauté for a few minutes.
  4. Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  5. Add the cooked kidney beans along with the water and simmer for 15-20 minutes.
  6. Sprinkle garam masala and mix well. Cook for another 5 minutes.
  7. Garnish with coriander leaves and serve hot with rice or roti.
