Rajma
Rajma is a popular North Indian dish made with red kidney beans in a spiced tomato-based sauce. It is typically served with rice or roti.
Ingredients
- 2 cups dried red kidney beans, soaked overnight
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
Instructions
- Pressure cook the soaked kidney beans with salt until they are soft.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger, and sauté for a few minutes.
- Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add the cooked kidney beans along with the water and simmer for 15-20 minutes.
- Sprinkle garam masala and mix well. Cook for another 5 minutes.
- Garnish with coriander leaves and serve hot with rice or roti.
