Ingredients

  • 4 eggs
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup water
  • 1 tablespoon sugar

Instructions

  1. In a pot, bring water to a boil and carefully add the eggs. Boil for 6 minutes for a slightly runny yolk or 7 minutes for a firmer yolk.
  2. While the eggs are boiling, prepare an ice bath in a bowl.
  3. Once the eggs are done, transfer them to the ice bath to stop the cooking process.
  4. In a separate pot, combine the soy sauce, mirin, water, and sugar. Bring to a simmer and then remove from heat.
  5. Peel the eggs and place them in the soy sauce mixture. Let them marinate for at least 2 hours or overnight in the refrigerator.
  6. Serve the ramen eggs as a snack or as a topping for your favorite ramen bowl.
