Ranau Sweet Potato Soup
Ranau Sweet Potato Soup is a traditional Sabahan dish that is both hearty and comforting. This creamy and flavorful soup is perfect for a cozy night in or as a starter for a special dinner.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground turmeric and cook for another minute.
- Add the diced sweet potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender and blend in batches.
- Return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste.
- Simmer for another 5 minutes, then remove from heat.
- Serve the Ranau Sweet Potato Soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground black pepper.
