Ranau Sweet Potato Soup

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the ground turmeric and cook for another minute.
  4. Add the diced sweet potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the sweet potatoes are tender.
  5. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender and blend in batches.
  6. Return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste.
  7. Simmer for another 5 minutes, then remove from heat.
  8. Serve the Ranau Sweet Potato Soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground black pepper.
