Rano Raraku Ramen

Ingredients
- 4 packs of ramen noodles
- 6 cups of vegetable broth
- 1 cup of sliced shiitake mushrooms
- 1 cup of chopped bok choy
- 1/2 cup of sliced green onions
- 4 boiled eggs, halved
- 1 tablespoon of sesame oil
- 2 tablespoons of soy sauce
- 1 tablespoon of miso paste
- 1 teaspoon of grated ginger
- 1 teaspoon of minced garlic
Instructions
- In a pot, bring the vegetable broth to a boil.
- Add the sliced mushrooms, bok choy, green onions, sesame oil, soy sauce, miso paste, ginger, and garlic to the pot. Simmer for 10 minutes.
- Cook the ramen noodles according to the package instructions, then divide them into 4 serving bowls.
- Ladle the hot broth and vegetables over the noodles in each bowl.
- Garnish with a halved boiled egg and additional sliced green onions, if desired.
