Rano Raraku Ramen

Ingredients

  • 4 packs of ramen noodles
  • 6 cups of vegetable broth
  • 1 cup of sliced shiitake mushrooms
  • 1 cup of chopped bok choy
  • 1/2 cup of sliced green onions
  • 4 boiled eggs, halved
  • 1 tablespoon of sesame oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of miso paste
  • 1 teaspoon of grated ginger
  • 1 teaspoon of minced garlic

Instructions

  1. In a pot, bring the vegetable broth to a boil.
  2. Add the sliced mushrooms, bok choy, green onions, sesame oil, soy sauce, miso paste, ginger, and garlic to the pot. Simmer for 10 minutes.
  3. Cook the ramen noodles according to the package instructions, then divide them into 4 serving bowls.
  4. Ladle the hot broth and vegetables over the noodles in each bowl.
  5. Garnish with a halved boiled egg and additional sliced green onions, if desired.
