Rano Raraku Ratatouille

Ingredients
- 1 eggplant, diced
- 2 zucchinis, sliced
- 1 onion, chopped
- 1 red bell pepper, diced
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic, and cook until softened.
- Add the eggplant, zucchini, and red bell pepper. Cook for 10 minutes, stirring occasionally.
- Add the tomatoes, oregano, basil, salt, and pepper. Cook for another 15-20 minutes, or until the vegetables are tender.
