Rapa Nui Dumplings
Rapa Nui Dumplings are a traditional dish from Pascuense (Easter Island) cuisine, featuring a unique blend of flavors and ingredients.
Ingredients
- 2 cups taro root, peeled and diced
- 1 cup sweet potato, peeled and diced
- 1 cup cassava, peeled and diced
- 1/2 cup coconut milk
- 1 tsp salt
- 1/2 cup cornstarch
Instructions
- In a large pot, bring water to a boil and add the taro, sweet potato, and cassava. Cook until tender, about 15 minutes.
- Drain the cooked vegetables and transfer to a large bowl. Mash the vegetables and mix in the coconut milk and salt.
- Add the cornstarch to the mixture, a little at a time, until a dough forms.
- Divide the dough into small portions and shape into dumplings.
- In a pot of boiling water, cook the dumplings for about 5-7 minutes, or until they float to the surface.
- Remove the dumplings with a slotted spoon and serve hot.
