Rapa Nui Dumplings

Ingredients

  • 2 cups taro root, peeled and diced
  • 1 cup sweet potato, peeled and diced
  • 1 cup cassava, peeled and diced
  • 1/2 cup coconut milk
  • 1 tsp salt
  • 1/2 cup cornstarch

Instructions

  1. In a large pot, bring water to a boil and add the taro, sweet potato, and cassava. Cook until tender, about 15 minutes.
  2. Drain the cooked vegetables and transfer to a large bowl. Mash the vegetables and mix in the coconut milk and salt.
  3. Add the cornstarch to the mixture, a little at a time, until a dough forms.
  4. Divide the dough into small portions and shape into dumplings.
  5. In a pot of boiling water, cook the dumplings for about 5-7 minutes, or until they float to the surface.
  6. Remove the dumplings with a slotted spoon and serve hot.
