Rapa Nui Quesadillas

Ingredients

  • 4 large flour tortillas
  • 1 cup cooked sweet potato, mashed
  • 1 cup cooked tuna, flaked
  • 1 cup grated mozzarella cheese
  • 1/2 cup chopped cilantro
  • 1/4 cup finely chopped red onion
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Spread the mashed sweet potato evenly on one half of each tortilla.
  2. Top the sweet potato with flaked tuna, mozzarella cheese, cilantro, red onion, and ground cumin. Season with salt and pepper.
  3. Fold the tortillas in half to enclose the filling.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Cook the quesadillas in the skillet for 3-4 minutes on each side, or until golden and crispy.
  6. Repeat with the remaining quesadillas, using the remaining olive oil.
  7. Slice the quesadillas into wedges and serve hot.
