Rapa Nui Quesadillas

Ingredients
- 4 large flour tortillas
- 1 cup cooked sweet potato, mashed
- 1 cup cooked tuna, flaked
- 1 cup grated mozzarella cheese
- 1/2 cup chopped cilantro
- 1/4 cup finely chopped red onion
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Spread the mashed sweet potato evenly on one half of each tortilla.
- Top the sweet potato with flaked tuna, mozzarella cheese, cilantro, red onion, and ground cumin. Season with salt and pepper.
- Fold the tortillas in half to enclose the filling.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Cook the quesadillas in the skillet for 3-4 minutes on each side, or until golden and crispy.
- Repeat with the remaining quesadillas, using the remaining olive oil.
- Slice the quesadillas into wedges and serve hot.
