Rapa Nui Spring Rolls
Rapa Nui Spring Rolls are a delicious and healthy dish from Pascuense (Easter Island) cuisine. These spring rolls are filled with fresh vegetables and seafood, making them a perfect appetizer or light meal.
Ingredients
- 12 spring roll wrappers
- 1 cup cooked shrimp, chopped
- 1 cup julienned carrots
- 1 cup julienned cucumber
- 1 cup bean sprouts
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup rice vermicelli noodles, cooked and drained
- 1/4 cup hoisin sauce
- 1/4 cup peanut sauce
Instructions
- Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften.
- Lay the wrapper flat. In a row across the center, place a handful of shrimp, carrots, cucumber, bean sprouts, mint, and cilantro. Leave about 2 inches uncovered on each side.
- Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the shrimp. Repeat with the remaining ingredients.
- Serve the spring rolls with hoisin sauce and peanut sauce for dipping.
