Rapa Nui Spring Rolls

Ingredients

  • 12 spring roll wrappers
  • 1 cup cooked shrimp, chopped
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1 cup bean sprouts
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup rice vermicelli noodles, cooked and drained
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut sauce

Instructions

  1. Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften.
  2. Lay the wrapper flat. In a row across the center, place a handful of shrimp, carrots, cucumber, bean sprouts, mint, and cilantro. Leave about 2 inches uncovered on each side.
  3. Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the shrimp. Repeat with the remaining ingredients.
  4. Serve the spring rolls with hoisin sauce and peanut sauce for dipping.
