Ingredients

  • 1 lb beef stew meat, cubed
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 4 cups beef broth
  • 1 cup red wine
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Pour in the red wine and simmer for 5 minutes.
  4. Add the carrots, potatoes, bell pepper, tomatoes, beef broth, bay leaves, and paprika. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
  6. Once the meat is tender and the vegetables are cooked through, remove the bay leaves and adjust the seasoning if needed.
  7. Serve the Rapsodia Rumena hot, accompanied by crusty bread or polenta.
