Rapsodia Rumena, or Romanian Rhapsody, is a traditional Southern European dish that is rich in flavor and history. This hearty stew is a celebration of the diverse culinary influences found in Romanian cuisine.
Ingredients
- 1 lb beef stew meat, cubed
- 2 onions, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 4 cups beef broth
- 1 cup red wine
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat.
- Add the onions and garlic, and cook until softened.
- Pour in the red wine and simmer for 5 minutes.
- Add the carrots, potatoes, bell pepper, tomatoes, beef broth, bay leaves, and paprika. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
- Once the meat is tender and the vegetables are cooked through, remove the bay leaves and adjust the seasoning if needed.
- Serve the Rapsodia Rumena hot, accompanied by crusty bread or polenta.
