Rasawala Bateta Nu Shaak

Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger and garlic paste, and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Stir in the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the cubed potatoes and mix until they are coated with the spice mixture. Add water as needed to create a gravy, cover the pan, and simmer until the potatoes are cooked through.
- Garnish with fresh cilantro and serve hot with roti or rice.
