Ingredients
- 3 cups fresh raspberries
- 1/2 cup sugar
- 1/4 cup water
- 2 packets unflavored gelatin
Instructions
- In a saucepan, combine the raspberries, sugar, and water. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture is syrupy, about 5 minutes.
- Remove the saucepan from the heat and strain the raspberry mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible.
- Sprinkle the gelatin over the raspberry liquid and let it sit for 5 minutes to soften.
- Place the bowl over a saucepan of simmering water and stir until the gelatin is completely dissolved, about 2 minutes.
- Pour the raspberry mixture into individual serving glasses or molds and refrigerate for at least 4 hours, or until set.
- Serve the raspberry gelee chilled, garnished with fresh raspberries, if desired.
