Ingredients

  • 2 cups fresh raspberries
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 egg, beaten

Instructions

  1. In a bowl, gently mix the raspberries, sugar, cornstarch, and lemon juice.
  2. Unroll one pie crust and place it in a 9-inch pie dish. Trim the edges.
  3. Spread the raspberry mixture over the crust.
  4. Unroll the second pie crust and place it over the raspberry filling. Trim and crimp the edges to seal.
  5. Brush the top crust with the beaten egg.
  6. Make several slits in the top crust to allow steam to escape.
  7. Bake at 375°F for 40-45 minutes or until the crust is golden brown.
  8. Cool before serving.
