Raspberry Pie, known as Plăcintă cu zmeură in Moldovan cuisine, is a delicious dessert that combines the sweetness of raspberries with a flaky pastry crust.
Ingredients
- 2 cups fresh raspberries
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 package (14.1 ounces) refrigerated pie crusts
- 1 egg, beaten
Instructions
- In a bowl, gently mix the raspberries, sugar, cornstarch, and lemon juice.
- Unroll one pie crust and place it in a 9-inch pie dish. Trim the edges.
- Spread the raspberry mixture over the crust.
- Unroll the second pie crust and place it over the raspberry filling. Trim and crimp the edges to seal.
- Brush the top crust with the beaten egg.
- Make several slits in the top crust to allow steam to escape.
- Bake at 375°F for 40-45 minutes or until the crust is golden brown.
- Cool before serving.
