Ratatouille de la Riviera, also known as Riviera Ratatouille, is a traditional dish from the Monégasque cuisine. This flavorful vegetable stew is a perfect representation of the fresh and vibrant flavors of the Mediterranean region.
Ingredients
- 1 eggplant, diced
- 2 zucchinis, sliced
- 1 onion, chopped
- 2 bell peppers, diced
- 3 tomatoes, chopped
- 4 cloves of garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and cook until softened.
- Add the diced eggplant, sliced zucchinis, and diced bell peppers to the pot. Cook for 10 minutes, stirring occasionally.
- Add the chopped tomatoes, dried thyme, dried oregano, salt, and pepper. Stir well to combine.
