Rava Idli (fluffy Rava Idli)
Rava Idli is a popular South Indian dish made from semolina and is a quick and easy alternative to the traditional rice-based idli. This recipe will guide you through making fluffy and delicious Rava Idli at home.
Ingredients
- 1 cup rava (semolina)
- 1 cup yogurt
- 1/2 cup water
- 1 tsp mustard seeds
- 1 tsp urad dal (split black gram)
- 1/2 tsp baking soda
- Salt to taste
- 2 tbsp oil
- 1 green chili, finely chopped
- 1 inch ginger, grated
- A few curry leaves
- 2 tbsp chopped coriander leaves
Instructions
- In a pan, heat oil and add mustard seeds. Once they start to splutter, add urad dal, green chili, ginger, and curry leaves. Sauté for a minute.
- Now, add rava and roast it on low flame until it turns aromatic and light golden in color. Remove from heat and let it cool.
- In a bowl, whisk yogurt and water. Add the roasted rava, salt, and chopped coriander leaves. Mix well and let it rest for 10 minutes.
- After 10 minutes, if the batter has thickened, add a little more water to adjust the consistency. Then, add baking soda and mix gently.
- Grease the idli plates and pour the batter into each mold. Steam the idlis for 10-12 minutes or until a toothpick inserted comes out clean.
- Once done, remove the idli plates from the steamer and let them cool for a minute. Then, gently remove the idlis using a spoon.
- Serve the fluffy Rava Idli hot with coconut chutney and sambar.
