Rava Idli (fluffy Rava Idli)

Ingredients

  • 1 cup rava (semolina)
  • 1 cup yogurt
  • 1/2 cup water
  • 1 tsp mustard seeds
  • 1 tsp urad dal (split black gram)
  • 1/2 tsp baking soda
  • Salt to taste
  • 2 tbsp oil
  • 1 green chili, finely chopped
  • 1 inch ginger, grated
  • A few curry leaves
  • 2 tbsp chopped coriander leaves

Instructions

  1. In a pan, heat oil and add mustard seeds. Once they start to splutter, add urad dal, green chili, ginger, and curry leaves. Sauté for a minute.
  2. Now, add rava and roast it on low flame until it turns aromatic and light golden in color. Remove from heat and let it cool.
  3. In a bowl, whisk yogurt and water. Add the roasted rava, salt, and chopped coriander leaves. Mix well and let it rest for 10 minutes.
  4. After 10 minutes, if the batter has thickened, add a little more water to adjust the consistency. Then, add baking soda and mix gently.
  5. Grease the idli plates and pour the batter into each mold. Steam the idlis for 10-12 minutes or until a toothpick inserted comes out clean.
  6. Once done, remove the idli plates from the steamer and let them cool for a minute. Then, gently remove the idlis using a spoon.
  7. Serve the fluffy Rava Idli hot with coconut chutney and sambar.
