Ravani is a traditional Bukharan Jewish dessert that is loved for its fragrant rosewater and pistachio flavors. This moist and aromatic cake is perfect for special occasions or as a sweet treat with a cup of tea.
Ingredients
- 1 cup semolina
- 1 cup sugar
- 1 cup plain yogurt
- 1/2 cup vegetable oil
- 1/2 cup shelled pistachios, chopped
- 1/4 cup rosewater
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a large bowl, mix together the semolina, sugar, yogurt, vegetable oil, pistachios, rosewater, baking powder, and salt until well combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool in the dish for 10 minutes before cutting into diamond or square shapes.
