Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat the coconut oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  3. Add the sliced red bell pepper and cook for a few minutes until slightly softened.
  4. Pour in the coconut milk and add the tomato paste, curry powder, turmeric, salt, and pepper. Stir to combine.
  5. Add the shrimp to the skillet and simmer for 5-7 minutes, or until the shrimp is cooked through.
  6. Remove from heat and garnish with fresh cilantro.
  7. Serve the ravimbomanga sy voanio hot with steamed rice or crusty bread.
