Ingredients
- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 2 tbsp tomato paste
- 1 tbsp curry powder
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat the coconut oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the sliced red bell pepper and cook for a few minutes until slightly softened.
- Pour in the coconut milk and add the tomato paste, curry powder, turmeric, salt, and pepper. Stir to combine.
- Add the shrimp to the skillet and simmer for 5-7 minutes, or until the shrimp is cooked through.
- Remove from heat and garnish with fresh cilantro.
- Serve the ravimbomanga sy voanio hot with steamed rice or crusty bread.
