Ingredients
- 2 ripe avocados, pitted and peeled
- 1 cup raw cashews, soaked overnight and drained
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup almond meal
- 1/4 cup pitted dates
- 1/4 cup shredded coconut
Instructions
- In a food processor, combine the almond meal, dates, and shredded coconut. Pulse until the mixture sticks together.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a blender, combine the avocados, cashews, coconut oil, maple syrup, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy.
- Pour the avocado mixture over the crust in the springform pan and smooth the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours to set.
- Once set, remove the cheesecake from the springform pan, slice, and serve chilled.
