Raw Avocado And Lime Cheesecake

Ingredients

  • 2 ripe avocados, pitted and peeled
  • 1 cup raw cashews, soaked overnight and drained
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup almond meal
  • 1/4 cup pitted dates
  • 1/4 cup shredded coconut

Instructions

  1. In a food processor, combine the almond meal, dates, and shredded coconut. Pulse until the mixture sticks together.
  2. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a blender, combine the avocados, cashews, coconut oil, maple syrup, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy.
  4. Pour the avocado mixture over the crust in the springform pan and smooth the top with a spatula.
  5. Refrigerate the cheesecake for at least 4 hours to set.
  6. Once set, remove the cheesecake from the springform pan, slice, and serve chilled.
