Ingredients
- 2 cups cauliflower rice
- 4 nori seaweed sheets
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 avocado, sliced
- 1/4 cup pickled ginger
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
Instructions
- Place a nori sheet on a bamboo sushi mat.
- Spread a thin layer of cauliflower rice over the nori sheet.
- Arrange the julienned carrot, cucumber, and avocado on top of the cauliflower rice.
- Sprinkle with sesame seeds and drizzle with a little soy sauce and rice vinegar.
- Roll up the sushi using the bamboo mat, then slice into individual pieces.
- Serve with pickled ginger and extra soy sauce for dipping.
