Raw Cauliflower Rice Sushi Rolls

Ingredients

  • 2 cups cauliflower rice
  • 4 nori seaweed sheets
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1/4 cup pickled ginger
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds

Instructions

  1. Place a nori sheet on a bamboo sushi mat.
  2. Spread a thin layer of cauliflower rice over the nori sheet.
  3. Arrange the julienned carrot, cucumber, and avocado on top of the cauliflower rice.
  4. Sprinkle with sesame seeds and drizzle with a little soy sauce and rice vinegar.
  5. Roll up the sushi using the bamboo mat, then slice into individual pieces.
  6. Serve with pickled ginger and extra soy sauce for dipping.
