Ingredients

  • 1 lb fresh fish fillets, cut into bite-sized pieces
  • 1 cup coconut milk
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1 small red onion, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 tomato, diced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fish, lime juice, and lemon juice. Make sure the fish is fully submerged in the citrus juices. Let it marinate for 10-15 minutes.
  2. After marinating, drain the excess citrus juices from the fish.
  3. Add the coconut milk, red onion, cucumber, tomato, and cilantro to the fish. Gently toss to combine all the ingredients.
