Raw Mango Chutney (amba Khatta)
Raw Mango Chutney, also known as Amba Khatta, is a popular condiment in Odia cuisine. It is a sweet and tangy chutney made from raw mangoes, sugar, and spices, and it pairs well with rice, roti, or as a side dish.
Ingredients
- 2 raw mangoes, peeled and grated
- 1 cup sugar
- 1 tsp salt
- 1/2 tsp roasted cumin powder
- 1/2 tsp red chili powder
- 1/2 tsp black salt
- 1/2 tsp ginger, grated
Instructions
- In a pan, combine grated raw mangoes and sugar. Cook on low heat until the sugar dissolves and the mangoes soften, stirring occasionally.
- Add salt, roasted cumin powder, red chili powder, black salt, and grated ginger. Mix well and cook for another 2-3 minutes.
- Remove from heat and let the chutney cool to room temperature.
- Transfer the chutney to a clean, dry jar and store it in the refrigerator.
