Raw Mango Chutney, also known as Kacha Aamer Chutney, is a popular and tangy condiment from Bengali cuisine. It's a perfect blend of sweet, sour, and spicy flavors that pairs well with various dishes.
Ingredients
- 2 raw mangoes, peeled and grated
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon black salt
- 1/2 teaspoon ginger, grated
- 2 cups water
Instructions
- In a pan, combine grated raw mangoes, sugar, and water. Cook over medium heat until the mangoes are soft and the mixture thickens, stirring occasionally.
- Add salt, roasted cumin powder, red chili powder, black salt, and grated ginger. Mix well and cook for another 2-3 minutes.
- Remove from heat and let the chutney cool to room temperature.
- Transfer the chutney to a clean, airtight jar and refrigerate until ready to serve.
