Raw Tamarind Soup (pachi Pulusu)

Ingredients

  • 2 cups raw tamarind pulp
  • 4 cups water
  • 1 tsp salt
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 2-3 green chilies, slit
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A few curry leaves
  • 2 tbsp chopped coriander leaves

Instructions

  1. In a large bowl, mix the raw tamarind pulp with water and let it soak for 10 minutes.
  2. Squeeze the tamarind pulp to extract the juice, then discard the pulp.
  3. Add salt, red chili powder, and turmeric powder to the tamarind juice and mix well.
  4. Heat a small amount of oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Once the seeds start to splutter, pour this tempering over the tamarind mixture.
  5. Garnish with chopped coriander leaves and serve the soup at room temperature.
