Raw Walnut Taco Lettuce Wraps

Ingredients

  • 1 cup walnuts
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1 head of lettuce, leaves separated
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced

Instructions

  1. In a food processor, pulse the walnuts until finely chopped.
  2. Add the chili powder, cumin, paprika, cayenne pepper, and salt to the food processor and pulse to combine.
  3. In a small bowl, whisk together the tamari, olive oil, and water. Pour over the walnut mixture and stir to combine.
  4. To assemble the wraps, spoon the walnut mixture onto each lettuce leaf and top with tomatoes, red onion, cilantro, and avocado.
