Raw Zucchini Noodle Salad

Ingredients

  • 2 large zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup pine nuts
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the zucchini noodles, cherry tomatoes, red onion, and basil.
  2. In a small dry skillet, toast the pine nuts over medium heat until golden brown and fragrant, about 3-4 minutes. Be sure to watch them closely as they can burn quickly.
  3. Add the toasted pine nuts to the zucchini noodle mixture.
  4. In a small bowl, whisk together the olive oil and balsamic vinegar. Pour the dressing over the salad and toss to combine.
  5. If using, sprinkle the feta cheese over the top of the salad.
  6. Season with salt and pepper to taste.
