Raw Zucchini Noodle Salad
This raw zucchini noodle salad is a refreshing and healthy dish that's perfect for a light lunch or as a side for a summer barbecue.
Ingredients
- 2 large zucchinis, spiralized
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup pine nuts
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the zucchini noodles, cherry tomatoes, red onion, and basil.
- In a small dry skillet, toast the pine nuts over medium heat until golden brown and fragrant, about 3-4 minutes. Be sure to watch them closely as they can burn quickly.
- Add the toasted pine nuts to the zucchini noodle mixture.
- In a small bowl, whisk together the olive oil and balsamic vinegar. Pour the dressing over the salad and toss to combine.
- If using, sprinkle the feta cheese over the top of the salad.
- Season with salt and pepper to taste.
