Ingredients

  • 500g beef, cut into cubes
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 3 bay leaves
  • 3 Tbsp tamarind paste
  • 5 shallots, finely chopped
  • 6 cloves garlic, minced
  • 2 Tbsp coriander seeds
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 L water
  • 4 hard-boiled eggs, halved
  • 4 cups steamed rice

Instructions

  1. In a large pot, combine beef, lemongrass, kaffir lime leaves, bay leaves, tamarind paste, shallots, garlic, coriander seeds, turmeric powder, salt, sugar, and water.
  2. Cook over medium heat for 2 hours, or until the beef is tender and the broth is flavorful.
  3. Remove the lemongrass, kaffir lime leaves, and bay leaves from the soup.
  4. Serve the soup with steamed rice and hard-boiled eggs.
