Rawon Rhapsody
Rawon Rhapsody is a traditional Javanese black beef soup that is rich in flavors and spices. This dish is a perfect combination of tender beef, aromatic herbs, and a deep, savory broth.
Ingredients
- 500g beef, cut into cubes
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 3 bay leaves
- 3 Tbsp tamarind paste
- 5 shallots, finely chopped
- 6 cloves garlic, minced
- 2 Tbsp coriander seeds
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp sugar
- 2 L water
- 4 hard-boiled eggs, halved
- 4 cups steamed rice
Instructions
- In a large pot, combine beef, lemongrass, kaffir lime leaves, bay leaves, tamarind paste, shallots, garlic, coriander seeds, turmeric powder, salt, sugar, and water.
- Cook over medium heat for 2 hours, or until the beef is tender and the broth is flavorful.
- Remove the lemongrass, kaffir lime leaves, and bay leaves from the soup.
- Serve the soup with steamed rice and hard-boiled eggs.
