Ingredients
- 500g pork belly, sliced
- 3 tbsp soy sauce
- 2 tbsp cooking wine
- 1 tbsp sugar
- 2 tbsp chili bean paste
- 3-4 dried red chilies
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 2 green onions, chopped
- 1 tsp Sichuan peppercorns
- 1 cup water
Instructions
- Marinate the pork slices with soy sauce and cooking wine for 15 minutes.
- Heat a wok over high heat and add the marinated pork slices. Stir-fry until browned and crispy. Remove from the wok and set aside.
- In the same wok, add the dried red chilies, garlic, ginger, and Sichuan peppercorns. Stir-fry until fragrant.
- Add the chili bean paste and sugar to the wok. Stir-fry for a minute.
- Return the pork slices to the wok and stir to combine with the sauce.
- Pour in the water and let the pork simmer for 20-30 minutes until tender and the sauce has thickened.
- Sprinkle with chopped green onions before serving.
