Ingredients

  • 500g pork belly, sliced
  • 3 tbsp soy sauce
  • 2 tbsp cooking wine
  • 1 tbsp sugar
  • 2 tbsp chili bean paste
  • 3-4 dried red chilies
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 1 tsp Sichuan peppercorns
  • 1 cup water

Instructions

  1. Marinate the pork slices with soy sauce and cooking wine for 15 minutes.
  2. Heat a wok over high heat and add the marinated pork slices. Stir-fry until browned and crispy. Remove from the wok and set aside.
  3. In the same wok, add the dried red chilies, garlic, ginger, and Sichuan peppercorns. Stir-fry until fragrant.
  4. Add the chili bean paste and sugar to the wok. Stir-fry for a minute.
  5. Return the pork slices to the wok and stir to combine with the sauce.
  6. Pour in the water and let the pork simmer for 20-30 minutes until tender and the sauce has thickened.
  7. Sprinkle with chopped green onions before serving.
