Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and minced garlic. Sauté for 5 minutes until the vegetables are softened.
- Rinse the red lentils under cold water and add them to the pot. Stir in the cumin, paprika, salt, and pepper.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the lentils are tender.
- Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, you can skip this step.
- Adjust the seasoning if needed. Serve the soup hot, garnished with fresh parsley.
